The Jersey breed was developed in England by improving the local Norman and British cattle and selecting them for their butterfat content. Cows of this breed are characterized by small size. The average height of an adult female is 120 cm at withers, and live weight is about 400 kg. The weight of bulls is 600-700 kg.
Jersey cow's milk is ideal for the production of butter and cheese, as it is distinguished by its outstanding protein and fat content. Average fat content - 5.8-6.5%. Protein content is 4.2 - 4.4%.
Animals have calm character, high adaptability. At the same time, the breed has excellent reproductive characteristics. Calving proceeds without complications and usually does not require human intervention.
Jersey cows consume 20-30% less feed than other breeds. The high feed conversion ratio makes keeping this cow breed economically efficient.
The Holstein breed was developed in Europe as a result of selection of the Dutch black-and-white breed. Today it is the most widespread high-yield dairy breed in the world.
Representatives of the Holstein-Friesian breed have a strong constitution. The height of cows at withers is 145-150 cm, of bulls - about 160 cm. Adult cows weigh 600-700 kg, the average weight of bulls is 900 kg.
The breed is characterized by good stamina, productivity and high fat and protein content in milk. Fat content - 3.6-4.1%, protein - 3.5%. The breed is also distinguished by good meat qualities. The slaughter yield is about 50-55%.
Globally the Holstein-Friesian breed is considered the dairy breed No. 1. It has the best average milk yield among all breeds - 10,000 - 12,000 kg of milk per year.
The red-and-white breed was developed in Russia by crossing the Simmental and Holstein breeds. Animals of the red-and-white breed have a large build. The height at withers of cows is 132-138 cm, bulls - 140-145 cm. Live weight of first-calf cows is 530-550 kg, adult bulls - 900-1000 kg.
A distinctive feature of the red-and-white breed is high milk productivity: 7000-8000 kg per year. Fat content of milk is 3.8-4.1%, protein - 3.2-3.4%. The breed also has great meat potential. The slaughter output from the carcass is more than 60%.
Cows are well adapted to various climatic conditions and a long period of economic use (5-6 lactations). Voronezh region is the leading region for the breeding and distribution of this cattle.
The Montbéliard breed was developed in France and is widespread all over the world. Animals of this breed have a large and balanced body. The height at withers is about 140 cm. Adult cows weigh 600-650 kg, bulls 1000-1200 kg.
Milk of Montbéliard cows has high value for cheese making due to the presence of a special protein - casein. This milk is ideal for the production of hard and semi-hard cheeses. Fat content of milk is 4.4%, protein content is 3.6%.
Montbéliard cows are distinguished by their high adaptability, easy calving, high pregnancy rate: 70% of successful insemination from the 1st attempt, and a long period of economic use (up to 7 lactations).
The breed is meat and dairy. Slaughter yield of carcasses for cows is 52-54%, for bulls 56-58%.
The Belgian Blue breed is developed in Europe and is widely distributed in Belgium, France, Germany and the USA. It was first brought to Russia in 2015 at the Novomarkovskoye agricultural enterprise LLC.
The weight of an adult bull of the Belgian Blue breed is 1250 kg in average. Height up to 1.5 m. Often there are individuals weighing more than 1400 kg. Cows weigh up to 900 kg and have height at withers of 1.4 m.
The main distinguishing feature of the breed is a high degree of muscle development. In terms of meat yield, it surpasses any other breed: from carcasses up to 75%. When used in interbreeding with dairy or beef cows, the Belgian blue "adds" from 5 to 7% meat yield from the carcass. At the same time, the meat of the Belgian breed is dietary, since it contains almost no fat and cholesterol.
It was developed in Scotland and is one of the most common meat breeds in the world. Aberdeen Angus cattle is the earliest maturing. It is distinguished by unsurpassed qualities of meat and slaughter yield from 60 to 70%.
Animals are not large, black and less often red. Adult cows reach 500-550 kg, and the live weight of bulls is 750-950 kg. After fattening the weight of an adult Aberdeen Angus bull can reach 1000 kg.
The skeleton of animals is thin, so the carcass after slaughter contains no more than 18% of the bones. Fine-fibred, tender, marbled meat is filled with insignificant layers of fat.
